In the early twentieth century, a quiet revolution changed how people kept food fresh. Clarence Birdseye, an American inventor, noticed during trips to the Arctic that fish caught in extreme cold froze almost instantly and, when thawed months later, tasted remarkably fresh. He realised that the speed of freezing mattered: slow freezing formed large ice crystals that damaged the food's texture, while rapid freezing did far less harm. Birdseye developed machines to freeze packaged food quickly and brought frozen vegetables and meats to ordinary shops. His methods laid the foundation for the modern frozen-food industry now found in kitchens everywhere.
