Marisol runs a small bakery that once threw away dozens of unsold loaves every evening. Last spring, she began offering a 'surprise bag' an hour before closing: for a low fixed price, customers receive whatever bread remains, with no choice of items. The bags sold out within days. Marisol now wastes almost nothing, and she has noticed a different crowd arriving at dusk, mostly students and shift workers who could not previously afford her prices. She admits the idea was not original, but says watching food leave the shop instead of the bin is its own reward.
