Saffron, the deep red spice prized in many kitchens, is among the most expensive foods in the world by weight. Its high cost comes from how it is gathered. Each crocus flower produces only three thin red threads, and these must be picked by hand on the morning the flower opens. It takes roughly 150 flowers to yield a single gram of dried saffron. Because the harvest window is short and the work is delicate, machines cannot replace human pickers. A skilled worker may spend an entire morning collecting only a small handful of threads.
